For the vegan pancake batter, mix oat milk with flour and baking powder, add a pinch of salt. Let the dough rest for about 20 minutes.

Let the pan get hot, wet the pan with very little oil and heat until it starts to smoke.

In the meantime, add the mineral water to the dough and mix well again.

Using a ladle, pour some of the batter into the pan, spread it evenly by swirling it around in the pan and let it bake briefly. As soon as the pancake moves by shaking, it is ready to be turned. To do this, dip a spatula in oil, slide it under the pancake, lift, pause briefly, and then flip.

Do the same with the remaining batter. Keep brushing the pan with oil with each new pancake.
