Instructions:

In a large pot, bring plenty of salted water to a boil.

Add the Fleckerl and cook until al dente.

In the meantime, roughly chop the tomatoes. Slice the zucchini and green onions. Halve the bell bell pepper, remove seeds and cut into strips.

In a large skillet (or pot), heat olive oil and sauté tomatoes. Add the zucchini, onions and bell bell pepper and sauté. Season with salt and pepper and deglaze with balsamic vinegar.

Cut arugula into strips and mix in together with the cooked, strained Fleckerln. Season again to taste.

Arrange in deep plates and serve with shaved Parmesan cheese.
