For the vegetable patties, clean the vegetables and chop them in a shredder. Put them in a sieve and let them drain for at least 30 minutes. Add the salt.

Now add the remaining ingredients and stir in flour until the mixture thickens. (I use whole spelt flour, goes well with this).

I also chop the mozzarella, it makes it easier to stir in. Now form pancakes on a baking tray lined with baking paper and bake in the oven at 200 °C for about 15 minutes.

On a tray go out about six pieces.
