For the vegetable sausage salad, first halve the cucumber, remove the seeds with a spoon, quarter the cucumber lengthwise and cut into 1/2 cm thick slices.

Core the red, yellow and green peppers and cut into thin strips, quarter the radishes and also cut into thin slices.

Cut the tomatoes in half and slice them as well. Mix in the spring onions cut into rings and the drained corn.

Peel the eggs, halve them and cut them into pieces of your choice. Cut the cheese and the sausage into thin sticks and pour the marinade of cucumber juice, olive oil and possibly 2 tablespoons of mustard over them.

Serve the vegetable-sausage salad with wholemeal bread or other pastry.
