Peel and slice one onion and one garlic. Peel and dice the celery stalk. Sauté everything in 1 to 2 tablespoons of oil. Extinguish with wine and vinegar. Add culinary herbs and simmer gently for thirty minutes with the lid closed. Cool.

Cut venison into ragout pieces, cover with marinade and put everything together to cool for about two days.

Add the remaining garlic, diced, and sauté. Sauté drained ragout pieces in it. Season and cook gently for ninety minutes, half covered with marinade. Always add more marinade. Season concentrated sauce at the end. Serve with polenta.
