For the venison steaks with mushrooms, preheat the oven to 150 °C. Wash, clean and quarter the mushrooms. Peel and chop the shallots. Season venison steak with game spices.

Heat butter and frying pro in a deep pan, sear steaks on both sides, remove from pan and set aside.

Lightly roast shallots in the frying fat, add mushrooms, roast for 6-7 minutes, deglaze with game stock. Add meat, juniper berries, bay leaves and cranberry compote.

Put the pan in the preheated oven and roast for 50 minutes at low temperature, then season with salt and pepper, remove the bay leaves and serve the venison steaks with mushrooms with spaetzle.
