For the Waldviertel half dumplings peel the cooked potatoes and press them through a potato press. Rub raw potatoes into cold water and after about 30 minutes squeeze the potatoes well.

Let the potato water stand (potato starch collects at the bottom), carefully pour away the water and add the remaining potato starch to the potato mixture.

Knead the raw and cooked potatoes with flour, semolina and potato starch, form small dumplings and simmer in lightly boiling salted water for about 15 minutes.
