For the white glaze, boil the sugar cubes in water and spin them into a pearl. This is how it works: dip a wooden spoon into the boiled sugar mass and pull it out again, a sugar thread should stick to the wooden spoon, on which a pearl is formed that drips into the pot. The sugar thread will pull back again. If the sugar thread just trickles off, boil down some more.

Sift confectioners’ sugar and mix in enough warm sugar spun into the pearl to stir the glaze. Then stir the glaze for half an hour, mixing in more spun sugar if necessary, until it thickens a wooden spoon dipped in it.

Give the white glaze a particularly fine flavor by adding maraschino.
