Stir together whole wheat flour and beer and let rest for about 12 hours. Preheat the oven to 220°C, add wheat flour, salt, coriander and caraway to the pre-dough and work in well, heat bacon in a pan, chop onion and fry in bacon until light brown. Add to the dough mixture, mix yeast and sugar in a little warm water, add to the dough and knead well. Leave to rise in a warm place until the dough has doubled in size. Form into rolls and bake on a greased baking tray in a preheated oven. After 10 minutes, turn the temperature down to 200°C and bake for another 30 minutes until brown. Brush with beer several times during baking.
