For the wild boar sauce, finely dice wild boar meat. Wash and dice the celery. Clean, wash and dice carrots. Peel and dice onion.

Put celery, carrots and onions with bay leaves and finely chopped juniper berries in a pot with meat. Pour in wine and season with salt and pepper. Leave to marinate for 24 hours.

Pour the meat and marinade into a sieve, collect the dripping liquid. Peel and press garlic. Heat olive oil, roast garlic in it until brown. Add meat and vegetables and stir-fry.

Stir in tomato paste. Pour marinade, bring to a boil and stir in tomatoes in sauce. Simmer gently for 90 minutes.

Stir the wild boar sugo occasionally. Remove bay leaves before serving.
