For the wild garlic arugula pesto, wash the wild garlic and arugula and pat dry well. Now chop both with a knife and put them in a high mixing bowl. Add the pressed garlic cloves, lemon juice (increases the shelf life and keeps the bright color), salt, pepper and the olive oil and blend everything with a blender.

Caution – if the wild garlic gets too hot from pureeing – it can become bitter. Now finely chop the walnuts and stir into the pesto with the freshly grated Parmesan. At the same time, all the salt should also have completely dissolved.

Finally, pour the wild garlic arugula pesto into small (boiled) screw-top jars and cover with a thin film of olive oil.
