Instructions:

For the wine cream with fruit, beat the white wine, egg yolks and sugar over steam with a whisk until thick and fluffy.

Add the soaked gelatine leaves. Beat until cold, then fold in the whipped cream just before it stiffens.

Finally, mix in the diced compote fruit, pour into glasses and chill.

Garnish with whipped cream and fruit before serving.
