Coarsely crush the pepper, new spice and coriander seeds in a mortar. Crumble the cinnamon stick a little. Everything in a spice bag of fine gauze form and tie. (You can also do this with a disposable tea filter.) Boil the wine in the fondue pot together with the sugar and hang the tied spice bag.
Mix the 3 kinds of salt and put a little bit in a small dessert bowl for everyone to season the cooked meat. Skewer the slices of meat on fondue forks, cook in the boiling wine for about 1/2 to 1 minute, and season with the salt mixture.
Serve with: White bread and various seasoning sauces, such as Cumberland sauce, curry sauce, salsa…. There are no limits to your imagination. We also like to serve it with a green salad.
