Instructions:

For the zucchini and melanzani in batter, clean the melanzani and cut into slices about 5 mm thick.

Salt on both sides and place in a colander for about 30 minutes.

Cut baby zucchini in half lengthwise, cut larger zucchini into slices as well.

Prepare a thick batter with the flour, egg, spices and water.

Heat enough oil in a deep pan to allow the vegetable pieces to float in it.

Pat the melanzani and zucchini well dry, dip them one by one into the batter and fry them in the hot oil until golden and crispy.

Drain on a paper towel. Serve the zucchini and melanzani in the batter immediately, while the batter is crispy.
