Zucchini Au Gratin with Mediterranean Salad Sauce

Instructions:

1. preheat the oven to 200 °C. Rinse and clean the zucchini and cut diagonally into 1 cm thick slices. Season the zucchini slices with salt and pepper.

Mix the ricotta, breadcrumbs, 2 tbsp Parmesan, mixed kitchen herbs and egg yolks. Season well with salt and freshly ground pepper. Spread the mixture on the zucchini slices.

Heat 5 tbsp oil in a large frying pan and place the zucchini with the coated side up. Put the pan in the oven (on the top!) and bake the zucchini for about 15 min until golden brown.

In the meantime, clean and rinse the peppers, peel the garlic and the egg. Chop the egg, garlic, peppers and pine nuts. Stir through with parsley, remaining parmesan, vinegar and remaining oil. Season the sauce with salt, pepper and sugar.

Serve the zucchini au gratin with the sauce on plates.
