For the zucchini-carrot pancakes, chop the zucchini into small pieces (important to squeeze it properly before you continue processing it, so that it does not bring so much liquid).

Chop the carrots in the same way and mix the two vegetables together. Season with salt and pepper and add the sesame seeds. Chop the feta and add it to the mixture.

Then mix the corn flour (of course, it also works with wheat flour or any other flour) with the egg until a sticky mass is formed. It is important here that everything gets some of the egg.

Put a pan with some oil on the stove and form small balls from the mass. Then place them in the hot pan and press them flat to make pancakes.

Fry on one side until a good crust is formed and then turn over.When both sides are nicely browned, remove and enjoy.
