Add the zucchini quarters to the saucepan with the boiling vegetable stock with the garlic, corn semolina, diced onion, pepper, crème fraîche and turmeric, cook everything together on the stove for about 1500 cmin while stirring, then add the diced tomatoes, season with salt. Grease a savarin dish with butter, carefully pour in the corn porridge and gently press it with a spoon until smooth.

Mash the avocado flesh, season with salt and lime juice.

Just before serving, turn the hominy zucchini pudding out onto a platter, top with the avocado mash.

Alternative: instead of the zucchini, you could use 10 young okra. The cleaned okras to do have to be pre-cooked in about 5 min, only then you may add the remaining ingredients in vegetable bullion.

Tip: Zucchini are a type of pumpkin and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
