For the zucchini salad, first prepare the marinade: Mix the vegetable soup with mustard, cayenne pepper, juice of one lemon, salt and oil.

Dice the tofu, mix with the marinade and marinate for about 1 hour with the lid closed and at room temperature.

For the salad, wash the zucchini and tomatoes. Remove the stalks and blossoms from the zucchini and grate coarsely. Cut the tomatoes into small cubes and cut out the stalks.

Wash, dry and finely chop the chives. Cut off the cress.

Mix the vegetables with the marinade, add the tofu cubes and sprinkle the zucchini salad with chives and cress and serve.
